That's the thing, the art show they're doing in Paris seems to be old concept art of existing characters and not just canned concepts that were set aside. For instance they used pic related in the video and this is obviously not some abstract version of Kazuha since it looks very much like what we got ingame
They could easily fill out hundreds of pages with the pieces of art that actually WERE used, they just need to be selective if they have something that they don't want the public to see because it *might* be used for something else in the future
Furthermore it's not like it needs to exclusively be about the characters either, they undoubtedly also have thousands of random concept art pieces that were made when they were brainstorming area design and such. There really isn't any legitimate reason for why they haven't made a compilation of these things until now
