I'd say this is where the AI got it like 95% right with what I had in mind finally after working on the prompt a bit. Though I could probably keep tweaking the prompt a bit and spinning the AI gacha till I get something 100% perfect since it's gotten this close at all.

In more writing related terms, I am thinking of changing her pony disguise via the use of magic into a Unicorn one rather than Pegasus since still having access to her magic would be important and she spends most of her time on the ground anyway. So I should probably do a promp of her as a Unicorn too at some point.
