Why do you think she acts all "adult lady"-like? Surely she's wanted Sonic for ages but who's to say she hasn't wavered about it at one point or another? Especially since Sonic steers clear of her as someone would from the town bicycle even though he's what she really wants.
She's lonely enough to be vulnerable to the sort of attention she gets from some humans.
