You MAY be able to just straight up install SteamOS if you use an Nvme SSD (The installer is kind of dumb and expects specifically this)
Or you can pick up arch linux with a plasma desktop and look up how to set up a headless user session running Steam in Gamescope (It looks a little scary, but it's actually not that bad, or, really necessary).
On arch you can actually just straight up use flatpaks for all your non-system software just like SteamOS if you want.
