You don't know if your genes are "perfectly normal," that's the point. The kinds of illnesses that come as a result of inbreeded are recessive traits that don't become apparent until you start selectively breeding for them unintentionally through incest.

Like for all you know you carry cystic fibrosis genetically (autosomal recessive gene) but you wouldn't know until you breed with someone else also unfortunate enough to also carry it. And if you're carrying fucked up CFTR genes, it may run in your family. To get cystic fibrosis, the child needs TWO fucked up copies of CFTR (one from each parent). So if you're breeding in the family and unknowingly have a mutated CFTR gene (but you wouldn't fucking know) and it runs in your family, guess what's more likely to appear in you children than if you fucked a stranger?
