I'd choose Minecraft, but not the boring vanilla one where you place blocks and grow wheat.
I'm talking about a hardcore PvP-style world, full survival, where you spawn with other players, are forced to cooperate or betray, craft your weapons, enchant your gear, build your base, and defend your territory day and night.
A world with a makeshift economy, fragile alliances, wars, and midnight betrayals. A bit like old-school faction servers or the giant Bed Wars/Sky Wars, but... for real.
It would be rough, but never boring. Always unpredictable. No script, no NPCs, just players. Pure chaos, but living chaos.
And yeah, even if I get destroyed after two days, or 72 days of Minecraft, at least I'll have experienced something intense right to the end.
