I once read it had to do with some sort of ritual against what bulls represented (Baal/Moloch kind of deal) around the era of Taurus, which in turn got followed by the age of Aries', then Piscis (Jesus and the fish symbol)... on and on-- which would explain the ingrained reason why they always sacrifice the animal itself no matter the result
