American meat standards are notoriously terrible from what I understand, to the point that our meat is sold to you guys, but we don't buy yours.
We also don't have as much throughput per day on our fast-food, so the quality is generally better all around from the people I've spoken to who've tried ours vs what you get up there. I would like to try fast food in the US at some point just to see what the go is, but I do suspect it comes down to fat percentages in the used meat, the rules regarding processing prior to use in commercial settings, and a throughput difference that'll create the most noticable changes
I also think you guys have a lot more salt and sugar in your food than we do
