I don't have much experience with reverse-engineering either, but a proper port looks like it would be quite a bit of effort (it heavily relies on the Objective-C runtime so everything looks very annoying in Ghidra).
Maybe if someone manages to build the newest version of touchHLE that might work. 2.2 crashes immediately, but it seems like they implemented some of the required functionality.
