If you're looking for a preexisting character that has the right look I'd go with Shimizu Kiyoko from Haikyuu (pic related). She's got the hair, eyes, and general build at least.
I'm not the biggest fan of the show's art style but some of the fan art is pretty good, although most of it is of the dudes. Other complaints would be most of the pictures of her are in a school uniform, tracksuit, or outright porn. Which the tracksuit is actually pretty fine because OL wearing a tracksuit after work is like its own stereotype, but the school uniform is a little bit off. (Although Rui is a cosplayer so I guess it's not that much of a stretch really)
As a bonus to answer OPs question for Rui pretty sure she'd play Sims because it's the stereotypical girl game and she's not much of a gamer, but she's also surprisingly competent at tank based games (War Thunder or World of Tanks) because she watched Girls Und Panzer and got really into it so she wanted to try tankery for herself in videogame form. She's not super into the tanks themselves though mostly just picking whatever tank her favorite character drives.
Tabletop games are too much of a time sink for her generally with her work schedule, although she's competent at chess and othello from playing with her father a bit when she was a kid. A dark part of her wants to play MAID when she found out about it, but she hasn't told anyone.
