Here's a video I made of me doing the grab loop on the last boss forever ago, too. Basicially when you're doing the knee attack during the grab, you're invincible, so if the Galsia is coming up behind you, he won't detect a hittable target, so he'll give up and try to get around behind you. You just have to learn to manipulate turning the boss around while kneeing him to time it so that you're kneeing him just as the Galsia is close to you. It takes some practice and you don't even really need to do it if you're just trying for a 1CC, but it's good if you ever want to try deathless.
