Splats are much better than mesh-based photogrammetry for organic stuff like foliage. Trees actually look like trees instead of lumps. If you think about it, the best human-authored tree plant assets are also just clusters of quads with transparent textures on them, i.e. a splat. Some earlier vrchat splat rendering tech https://github.com/cnlohr/slapsplat rendered the splats as fake brushstrokes with cutout transparency, and while it's less accurate, it looks really cool, especially in motion/in VR. Very tilt brush-esque.
The other nice thing splats do is view-dependent color (from SH), so you get specular reflections without having to generate PBR materials for photogrammetry meshes. Unfortunately none of the vrchat implementations of splats do that yet.
