The danger of drinking water in the past is overstated (really only a problem for urbanites, and sometimes not even then). It's about variety, and food preservation. You leave grain sitting around, something is going to happen to it. Bugs, rodents, something is gonna get to it. You turn it into beer, the number of things that can successfully ruin your food goes down dramatically.
