There's a big difference between simplifying a character and sapping away all her adipose and doubling down on all the red, which I'm sure was done out of sheer pettiness on Viv's part. The simplifcation theory doesn't make sense anyways, when there are far more complex characters to animate than Charlie's pilot design. Case in point, Husk.
