Dark Souls 3 has several well executed gimmick bosses, and a lot of enemies with actual unique characteristics and alternative ways to face them.
Dark Souls 2 doesn't have gimmick bosses. At most you'll get NOT! Sif with a bunch of dogs, Armored Spider with a bunch of adds or Ceaseless Discharge but as main boss.

It appears clear to me that those who hate gimmick bosses and enemies are Dark Souls 2 fans. Too bad their roster of dudes in armor and big boss with a bunch of adds are every bit as mediocre as the worst gimmick bosses of the series
