Boil them to fork tender.

Lay out onto a baking tray with sheet. Crush with a heavy bottom object like a cup or glass.

Cover in seasoning and oil and bake until crispy.

Make a nice dressing too and enjoy.

-300g of baby potatoes (jersey royals are the best)
-5-6 slices of bacon
-2 shallots
-2-3 spring onion
-handful of fresh chives
-fresh parsley
-3-4tb of light mayo
-2tb of full fat Greek yogurt
-1tsp of Dijon mustard
-handful of pickled jalapeños
-1 large white onion
butter and good pinch of sugar to caramelise the onions
-2-3tb of sour cream
-1tb of cream cheese
-a sprinkle of onion powder , garlic powder , chicken seasoning and paprika
-spray oil
