1- The Hypergamy graph is exagerated.
Hypergamy = Women dating at their level or up.
So no, it's unrealistic to depict a 2/10 woman going for a 8/10 guy.
The 2/10 female can absolutely date 2's, 3's and 4's, even if she would prefer to date men of a higher level.

2- Not really. The vast majority of women are not aware / don't believe in their own Hypergamy. It's just a instinct or a reflex.
When it comes to social stuctures :
- Men naturally organise into hierarchies, mostly based on competence.
- Women organise themselves into egalitarian groups where the dynamic is being in or out of the group. You're either part of the group or you're an outsider.
This system is in place to avoid conflict in groups of women. The intra-sex (women on women) competition has to be indirect.
We men compete openly for status, women compete secretly or indirectly.
These are well studied phenomenae.
You can observe it when groups of kids play games.
Young boys will favor games and sports with hierarchies, a team leader and such.
Little girls will chose to play games where everyone is equal and/or has the same role.
So it's an innate desire for females to create egalitarian group, while for males it's natural to prefer well defined hierarchies.
It does correlate to sexuality a bit, because females are the "choosers", as in they run the Sexual Selection of mankind, as in they are the ones who decide who's good enough to reproduce and who isn't.
Sexual Selection, like Satural Selection, but for sex partners.
