They are basically robotic artifacts of power until they are donned (or actually don) a host. But most of the events of the arc were on Metatron acting independently out of her sense of duty. In this case, Metatron selected Jeanne for that, though she acknowledges Jeanne is inhumane even by angel standards.
They also expose the very names of angels carry power. If you make a magical artifact and name it after an angel that has power over flames, it will help guide the magic to produce flames.
We didn't get anything on demons however. That Lilith is the mesopotamian one that got the traits of biblical stories added to her. She has no relation to Adam and notes due to the anecdote Lilith had to sacrifice 100 children to God per day this gave her the power to birth at 100 Lilims in a day if she wants.
