Christian theology has more in common with Hellenistic Neo-Platonism than judaism, especially the modern rabbinical form of judaism followed by jews today.
The conflict over whether Christianity was judaism with belief in Christ added on, or an entirely new thing was resolved after the incident in Antioch and First Council of Jerusalem in the middle of the 1st century AD, with the Judaizing element losing.

What you think of as the "old gods" of European paganism (Zeus, Odin, Hermes, Thor, etc) are really from the foreign religion of the Proto-Indo-europeans which was imposed on the Western Hunter Gatherers and Early European Farmers who were the indigenous population of Europe as the Indo-Europeans expanded from the steppes across much of Eurasia approximately 4000BC-1000BC.
The WHGs and EEFs almost certainly did have religious beliefs before this, but they were completely supplanted and replaced by new religions and new pantheons of Gods that were based on the beliefs of the PIE outsiders.
Then, of course, Christianity began to replace those PIE-originated pagan "old gods" starting in the 1st Century.
Much of Europe has been Christian longer than it followed the specific religious beliefs and gods that you think of as the pagan "old gods."
