Open world games are a relatively recent thing unlike JRPGs, and even then most of them lean more on the realism side of things.

In terms of fantasy Open World games its basically just ER, BotW and some budget games here and there.
Genshin is a shit game but as far as anime styled fantasy open world games I don't think any other game in it's genre has better art direction and a better world(except maybe ER, but it's not anime styled), so I think Genshin at least has a justification to exist as a game.
