Some of it is economies of scale - Bandai prints soooo many kits that the cost of the injection molding machine per kit is basically nothing. They're also big enough that they can afford the best engineers/designers to figure out the best parts break-down, sprue layout, etc.
But, because of anime (lack of) details, the individual parts don't necessarily need have that much detail - Bandai puts more of their effort into making lots of tiny parts with connections precise enough that they all snap together. This is rather than something like a realistic F-16 which has curves and details which make manufacturing harder to make.
