Carving of figures is sanctioned in the Old Testament.
The problem if idolatry arises if you worship those statues instead of God. We do not worship the Blessed Mary, we simply venerate her (as she herself foretold in the New Testament) and we ask her to pray for us (as the New Testament instructs us to do)
