> It's not about the specific items, the problem is that the quality of ingredients is dogshit in most places
This has been my experience as well.
>tried beef mami the first time and it was delicious
>every other time it taste like rotten beef fat floating in week old broth
>tried tapsilog once and it was delicious with good quality marinated beef
>next few times it was week old gristles with too much salt and sugar
It is super rare to find any place that takes pride in their product. Because in the Philippines success brings copycats. And those copycats will cut corners to cut their price and steal your business. Which then leads to a downward spiral of quality and price competitiveness. Until everyone hits the bottom of what they can charge for their inedible slop, “50 peso meal”
Meanwhile, the biggest culinary event of the year is taking place. McDo has curly fries for a limited time. 80% of Filipinos have never tasted this. They are acting like it is the second coming of the Nazereno (at least in my little provincial capital)
