Italians and Jews are both in porn for the same reason they got into murder for hire, gambling, labor unions, prostitution, political corruption, nightclubs (including gay ones like Stonewall) and a whole bunch of other illegal and at the time illegal and/or seedy things things that were frowned upon in polite company. It was easy money and during Prohibition many mobsters weren't just Italian, but also Jewish. Remember Mayer Lansky, you can look a lot of this shit up. Porn was mostly illegal in the US up until the 60s after the Supreme Court argued in favor of it being protected by the 1st Amendment - until then it was in black market territory which was dominated by organized crime.

Also, like Jews, Italians weren't very well accepted by most Americans when they came over in waves in the late 1800's and early 1900's. That along with the fact some had ties to the Sicilian Mafia from back in their homeland led many of them to seek opportunity in crime. Jews and Italians also have shared ancestry going back to the Bronze Age as evidenced in haplogroups, though Italians also have a lot of Indo-European ancestry from Celt and Iranic invaders from the steppe which gave the region the Latin language. This along with later Germanic ancestry (also Indo-European steppe peoples) later on provided many Italians with a White appearance though a Bronze Age Middle Eastern appearance still lingers among many.
