For me, it's when the line is crossed into nudity or explicit depiction of sexual acts. At that point it's just pornography and I don't play porn games. I don't mind playing a game that has eroticism but that's the line I draw personally.
Nudity = Depiction of nipples. vagina, penis, asshole.
Explicit depictions of sex acts: Pretty much any category you can find on a porn site.
Some games come extremely close to this line without actually crossing it, and I'm fine with playing those games. For example some games will have the women be in microbikinis, but it's not actually nudity because the nipples and vagina are covered. Sometimes they'll have a sex minigame or sex in a cutscene, but it isn't explicitly depicted, it's just implied or described. That's about as slutty as I'll get in a video game, otherwise why not just go watch pornography?
By this definition I consider Game of Thrones to be porn. Though it doesn't show explicit sex acts, it also doesn't hold back with showing penises, vaginas and nude actors miming out sex. It's softcore porn but it's still got porn in it and it was the most popular show on television for years.
Depiction of nudity isn't always sexual either, like in Conan Exiles, but if your definition of pornography is more strict than mine you'd consider that porn. Not that it matters because people will jerk off to pretty much anything, there's guys who jerk off to cars.
I'm aware I'm in the minority with this opinion. Most people would probably disagree with me and say that any kind of eroticism is porn and that GoT is not porn because they only mimed sex acts and didn't actually do them. Whatever justification they need to pretend they aren't watching softcore porn.
Also I've got nothing against pornography or pornography video games, I just don't play porn games because I never understood the appeal of playing Tetris to unlock a nude image or seduction simulators with cringe inducing writing. More power to you if you enjoy that.
