Brisket is actually kind of hard to get here not because there is no beef but because it's rarely sold as whole brisket, it's often cut in thin slices by butchers and sold as some cheap meat. Which is literally what brisket is.
I often have to get an order from butchers before date so they don't cut the brisket and sell it to me whole.
I use a local hardwood, nance. it gives a very strong smokey flavour and gives it a nice char. Smoke ring is not as deep but it's very strong.
Bet you can find this wood as tropical flavour wood.
