I recently placed a large order tuna belly and various deenz from Donostia foods which I just recieved. The tuna belly came in a nice wooden box. I have a few ideas of how I want to pair the sardines in escebeche but unsure what I want to do with the tuna belly. Definitely eating one straight from the can. Other high end stuff i got:
Güeyu Mar - chargrilled sardines
Fangst - Norwegian smoked trout with lemon
Hurricane Corerra - Portuguese trout smoked over alder
