Full armor was cumbersome, and more importantly, *too expensive*, so only a few elite heavy units wore it as standard issue in battle, almost always knights on horse. Pitched battles of mass infantry formations wearing a full panoply never happened, infantry was 99% of the time lightly-medium armored. Movies are bullshit and paintings are the propaganda of the time
