You could probably ease the UI implementation by setting it up as an asset beforehand. Like, the health bar and nameplate for an entity could just be one folder and you adjust the cube that makes up the fill on the health bar. Similarly, I'd suggest setting up each character's POV HUD/UI ahead of time right from spawn/origin, adjusting the HUD so it looks right from POV, and then parenting the HUD and character to the same folder or parenting the HUD folder to the character's head so they move together and you don't have to adjust the UI manually for each shot.
