You decide to just scale down. The proceeds from a small business can be used to setup a larger one later.

You work out some rough figures and agree on some details. Soon you come to an agreement. You and Jesse will provide Alex a modest sum and she'll open your business. Then you'll give her cash to launder.
Alex: "I think that settles that. From here I think emails will be fine. Oh, and I'd like to be a girl again. Ok?"
Easily done. You shake his hand and swap her back to her old self.
