Start in the frozen/refrigerated food section when you go to the market and pick up something that goes bad quickly when warm, like ice cream or milk. Continue your shopping like normal.

When you've gotten everything else you need, go to the snack aisle and swap your perishable item for some cookies. Don't put the perishable item at the front of the shelf. Bury it as far back as you can without looking like you're doing that.

This works best if you stick your perishable item behind a low demand snack, like those weird mexican cookies. That way it won't be discovered for a few days, by which point it will have gone completely bad. Something like milk can start leaking out of the carton and its a gigantic mess to clean off shelves.

You don't want to do this a lot. They'll check the cameras if it happens too frequently and you'll get caught, but if there are enough stores near you then you can rotate stores to do it more often.
