Ryu gets away with his simplicity via grandfather clause. A character with such basic motivations and little personality wouldn't fly now but when that character is essentially the first example of a protagonist in a fighting game it doesn't take a lot to sell that idea and people can accept if they keep knocking around with that level of characterization in future appearances because, hey, who else is going to fill that role?
