Armenian here. Clearly the listmakers have never experience khash. We slow simmer hooves and trotters all day until they are a gelatinous blob. Smells so horrible we have to cook it outside away from the house and neighbors. A khash party is held starting hours before serving the khash. Everybody gets plowed on cognac because otherwise they wouldn't be within a hundred meters of simmering khash. #1.
