People say they want a game that gives them this feeling, but you don't actually want a game like this. Look at all that empty space with nothing in it. No inhabitants. No interesting landmarks. It's just an open field. This would take over 10 minutes of running on horseback just to reach the large statues in the back. Sure, Elden Ring has a lot of space, but those empty spaces take like 30 seconds to pass at most. The vast majority of the game has something to interact with or look at every few seconds, especially in Limgrave. If you can't handle 30 seconds of running on Torrent in Elden Ring in an empty field, you wouldn't be able to handle a truly vast world (akin to the emptiness of real life, have you seen the Sahara desert?). You don't actually know what you want from games.
