the key is that solid beef is generally not too unsafe rare, because most of the contaminants are on the exterior and these are sanitized quickly by the heating process

it's for this reason though that rare hamburgers are significantly* less safe than rare steaks as the grinding/mixing process spreads the contaminants throughout the entire batch. also if you're not grinding yourself or have a trustworthy butcher the meat might come from multiple sources or unclean grinders, upping the rest

*significant means scientifically significant but the chances of getting dangerously sick are still fairly low (but nonzero)

supplementing with plenty of garlic will help keep away the vampires tho
