The problem with drawing ethnic features onto cartoon characters is that the more abstract and simpler the character, the more off-putting it is to see them with ethnic features. Scott McCloud's books go over this. Nobody minds that Khan from KOTH is depicted with slanted eyes because KOTH's art style goes for something that's more grounded and "realistic". And it's not like Asian characters are the ONLY demographic with unique/non-rounded/stylized eyes in KOTH. Look at Cotton.
