I'll be frank, I'm not good at stating why I think it's good.
I found Josephine to be a fun interpretation of Joseph, even if she's way too coherent. I liked the angle that Cathy, passed away, yet haunts the manor, inseparable from it.
I felt like Heathcliff didn't love Cathy, or he used to love Cathy when they were young, too young maybe to understand what love between committed adults means. He loves the idea of loving Cathy. As you say, she's kind of a shitty person. The mirror worlds are a very clear way to show Cathy's shitty side, being the mirror ghost of her you fight at the end of the canto. The book has you doubt & suspect the characters one by one, a prominent one being Nelly. Is she really a supporting maid, or does she too have a hand in Heathcliff's abuse?
I'm an easy crowd. I didn't saw Verg's sudden arrival coming. I'm a sucker for simple shonen, so I loved that.
Same with the final battle having the vocals swap mid-fight when you swap between Erlking and Cathy. It's textbook marrying mechanics and story, and I love that in every game I see it in. Same with Clearing All Cathy where you clear your goddamn cache. It's so stupid but played in earnest, and I can't hate it for that.

I like Limbus for grabbing some broad strokes from it's source material and adapting them in fun ways. It's not some genius perfect 1-on-1 adaptation, as much as I see some people herald it as such. And I think Canto VI did that well.
We agree on Canto IV being the best one at least.
