I think it is the inhuman/unnatural nature of the material. You will struggle to write an interesting story where a girl gets into an outfit like that without being coerced or forced.
"I'm in a loving marriage and wanted to try latex new for my husband". Those kinds of stories exist but unfortunately, people like us who enjoy the fashion of latex but don't get off on humiliation are rare.

All that aside, I love the genre "women being pressured into latex and finding it horrible and uncomfortable at first but then loving it".
