Enemies have multiple different types of attacks that you have to respond differently
You can parry but often you won't get to retaliate because the followup attacks arent invulnerable and enemies can keep up their pressure. In other words you'll have to parry multiple attacks in a row often.
There's also perfect dodge similar to parry
