I also don't have Skirk and Escoffier but managed to beat difficulty IV. V was impossible for me though.
One of my friends beat the V version of the cryo shill boss with C1 Skirk and Shenhe instead of Escoffier, but I'm not sure if a C0-C1 Ayaka or Wrio with Shenhe could do it without Escoffier in case you do have them.
