Brined, cured salmon, "lox" being derived the generic Yiddish word for salmon ("laks") regardless of preparation. It got big in New York when Jews were seeking a substitute for meat+dairy sandwiches, so they took the brined salmon and combined it with schmear (cream cheese), capers, and onions and put it on a bagel and the rest is history.
