ST Regex does this relatively easily. You create two Regex rules.
>One rule where the pattern is your name, replace with Anon/another name, only on User Input, Alter Outgoing Prompt
>Another rule where the pattern is Anon, replace with your name, only on AI output, Alter Chat Display

Of course, this gets more complicated if you're using nicknames/petnames but this covers 99% of cases.
