As someone who has written many stories, some of them being on the more wholesome side should that interest you, it has likely to do with both erotic artists tending to not feel restraint of normal writing and thus escalating the content in it (In my personal opinion, this can at times ruin the actual plot of the story due to adding more 'plot'), as well as Latex being a clothing fetish and thus being very compatible with almost any fetish from Vanilla to 'Things too far for human eyes'.

I usually try to put some restrain on myself when writing, though I am guilty of putting in more than just Latex, but not the heavy humiliation other stories tend to have.
