Why aren't there any games out there with this specific type of vista?

Witcher 3 is probably the only ones I can recall where you can get this type of view going down hills towards the castle that is in the distance. Kingdom Come is dogshit at this since you're mainly always on leveled ground and all the castles just look like backwater shit holes with no awe to them cause the devs decided to just go the shitty "realism" route.
