Smoked food gets a layer on it people call the 'bark', usually the marinades and such that goes onto stuff like brisket contain a lot of sugars (which blacken) combined with the Maillard Reaction which is what gives meat a kind of 'crust' when cooked at high heat, plus some smoke.

Its delicious and doesn't taste overly burnt, just very heavily smoked.
