Just check the nutritional info so it's not a bunch of carbs that fuck you up. If it's cheaper protein, it will almost certainly be less bioavailable (doesn't matter) and maybe less complete (does matter).

It really depends on local prices.
Have a look at picrel. It's old and the prices are outdated (pre-covid), plus they were euro prices to begin with, but the relative positions should still be similar.
If you look at the right graph you can see that purely in terms of cheap protein, seitan is great. (you don't have to buy prepared seitan you can make your own from flour, or buy it as a powder). However it's pure gluten, meaning if you got allergies it's a no-go, and it's not very complete, roughly 60% or so iirc.
Other cheap proteins are chicken legs (that is whole leg+thigh+back piece), eggs (not if you're american) and tofu. Question is if only price matters to you or also calories per protein (so only lean protein).

As for what I like in terms of plant based proteins, I like seitan, tofu and lentils myself. Also tempeh but it's overpriced here, and making it yourself is a pain if you try to de-shell the beans.
