Don't presume to know my reasons. There are many girls in anime who are similar to Hinata, who I also like, but her appeal for me goes beyond being merely demure or having a hime cut. While I of course think she's captivatingly beautiful and plain at the same time, with her gentle smile, and stark white eyes which can he tender or terrifying, she's such a kind soul so she never wants to hurt people. Even though she could be stronger, she never truly desired a warrior's life because her heart wasn't in it. As she matured she understood that being a warrior wasn't only about supremacy over others, but protecting the innocent, and people she loves.
She appears meek and submissive but is quietly defiant all along which leads to her losing her inheritance. Early in her life she decided that her family's acceptance wasn't more important to her that her dignity and happiness, which is very unorthodox for a woman raised in such a traditional household. She rejected it all in lieu of simply wanting create a home full of love. Yet it's in knowing Hinata isn't the strongest kunoichi in the village but also isn't just a placid wallflower either and had cultivated physical and mental strength throughout her life, is what shoots the love arrow through my heart.
She's a character I admire deeply, because she represents a positive selfishness, the pursuit of happiness, the desire for self-love and outward expressed love which is inherent in all anxious people. For me she represents the meaning of life itself. Looking at her grounds me. She calms me down. Her strong sense of self worth for its own sake makes me want to better myself too. I don't see her as a girlfriend or my wife. She's my friend.
