that's not really relevant, nobody is going to go out of their way to eat gimmick shop slop. they focus on putting these pop up cafes in the big cities regardless of which country it is. the real difference is the way spaces are utilized. in asia you have 10-story retail buildings which are easily accessed with public transit and walkability. it's simple enough to rent out one of thousands of empty stalls in the city to set up any kind of business you want at a reasonable rate and for customers to get there.

in the US there's been a larger dying off of retail spaces due to a number of factors. we never had 10 story retail here, we at best have sprawling 2-story malls that are super expensive to rent for businesses because of greedy corporate landlords who own all land. and the spaces are inaccessible to customers without driving and drivers have to deal with crowded parking lots, and more people are just choosing not to go. it's for these reasons that US retail is in trouble which has secondary impacts on local businesses like small cafes that rely on the foot traffic brought in by the big stores.

to get profitability in the US you need something like a self-contained food truck and target only the densest leisure areas where people are already primed to overspend on bullshit. this gives you the ability to move or rebrand at a minimum of cost when the current fads die out.
