lol so this is a gimmick video of an absolutely delicious and beloved street food snack called puchka/ panipuri / golgappa
something I actually had yesterday evening, as it happens.
the idea is to have a very thin hollow flour sphere which is broken and stuffed with a filling made up of spiced mashed potatoes and sometimes peas and then dunked in the real magic ingredient - the liquid. The liquid is made from mint, ginger, green chillies, a bit of coriander and a blend of spices and served chilled. The golgappa vendor's skill lies in customising and plating the filling and the water and optional ingredients including a sweetened ginger and mango sauce.
the way you eat it is that you pop the whole thing into your mouth and crunch down, which gives you an explosion of flavour in your mouth. Goddamn I had it last evening and I miss it already.
