People are literal sheep and will rate a place 5 stars because they put the right meme up on the wall. BBQ culture has also been gentrified to an insane degree where pretentious fucks will cream themselves over the kind of wood used even when they can't taste it since they smother everything in sugar sauce. I've never ever been to a hip, world famous, must try restaurant and been served anything above par for the area. It's more profitable for them to make instagram food than tasty food.
